Carcassonne soil :
The river Aude has run, since ancient times, towards the West ...
The ancient high & middle terraces of the Aude département
join here.
The soil heat ups very easily & is relatively early fruiting. Open
to the Lauragais corridors, they are susceptible to the influences
from the East & West currents.
The land is planted with a selection from the wide range of permitted
grape varieties- both the mediterranean & the oceanic.
The slopes on the north side of the Massif, at altitude, fruit
later & are particularly suited to the Merlot & Cabernet Franc grapes.
The wines are easy to drink, are full in the mouth with a nice long
finish. The red fruit aromas, & spices, seduce both the nose as well
as the mouth.
