ominican
soil :
It is the area that is the furthest west in the region, & therefore
the most affected by the oceanic influence. The vines, established
on the rounded hilltops, face South/South West, where the clay/chalk
layers are mixed with the fine sandy soil.
The type of soil & the position of the land determine the choice
of grape variety ; the whole range
can be found here.
The wines are smooth & complex, fragrant & spicy.
